Carrot Apple Relish

  • 4 carrots medium-large size
  • 1 apple medium size
  • 2 shallots
  • 1 tbsp vinegar – distilled
  • 1 clove garlic
  • 1 tsp olive oil
  • 1 dash salt


  • Clean and peel the carrots and the apple. Place in pot and fill with water until covered, place on stove, boil and then reduce to simmer. Cook until carrots are soft enough to mash.
  • Peel the shallots and cut them into quarters. Mince garlic. Fry the shallots and garlic in olive oil on a pan, till they start to caramelize.
  • Check the carrots and apples to see if they have had enough, by pricking them with a fork, if the carrots fall of the fork again they are ready.
  • Transfer all ingredients into a container you can mash them in or alternatively, blend with a blender.
  • Blend and adjust the consistency to your liking with a bit more of the steaming liquid. Salt to taste.
